We also learned that there’s a dedicated part of the industry that raises young olive trees for the first years until they’re ready to bear fruit — fascinating!
  Mando explained why harvests and yields vary from year to year, and how organic cultivation, water scarcity and eco-friendly harvesting make the process demanding and deserving of a fair price from consumers. It was inspiring to hear how the market has evolved: where older generations often chased volume, today quality is measurable and protected by international standards, regulations and objective lab testing — and by informed customers.

  The tour did answer all our questions about cultivation, production and transformation of olives and olive oil.
  The tasting is delicious and i learned today that the olive oil I've consumed up to this day dont even compare to the oil made here.
  My highlight of the day (and probably of the whole trip) is Mando taking care of my baby while we eat the food they prepared for us during the tasting showing her around and showing flowers and other things to my baby.
